Paleo Chocolate Chunk Cookies

Today I wanted to share one of my favorite paleo treats from Running to the Kitchen, created by Gina Matsoukas. They didn't turn out quite as pictured on the website because I couldn't chop the chocolate into small pieces, but the result was chunkier chocolatey chunks- which I am more than okay with! Not only are they amazingly delicious, but they satisfy quickly- which has helped with my sugar detox. And they are all-natural, gluten-free, and dairy-free, which makes them healthy and edible for anybody no matter how it is that they eat!

Ingredients:
1 cup almond flour
1 pinch of salt
1 pinch of baking soda
3 tbsp melted coconut oil
2 tbsp all natural honey
1 tsp vanilla extract
1 tbsp almond milk (can't remember if I substituted coconut milk)
1/4 cup chopped (at least 70%) dark chocolate pieces (I used some I bought at Trader Joes)

Cooking instructions
1. Preheat oven to 350 degrees and line a baking sheet with parchment paper. 
2. Combine dry ingredients in a medium-sized bowl.
3. Whisk wet ingredients together in a bowl (of any size).
4. Add wet ingredients to dry ingredients and mix together well.
5. Take a tablespoon amount of batter and roll together with your hand.  Place it on the baking sheet and press down so that it is shaped in a half-circle. (The instructions say to use a scoop, but I couldn't do any of this with a scoop.)
6. Bake for 10-11 minutes until bottoms turn brown.
7. Remove from oven and let cool for 3 minutes. They may be soft when first pulled out of the oven, but will become firm after a few minutes.

  3. These look amazing. It's nice to hear that they tasted good without all the extra crap, but I'll have to try it myself to really believe it! ;)
